Getting ready to peal 4 pounds of  Raw Cacao straight from the Rainforest of Misahualli-Shiripuno , Ecuador. If you have never tried Cacao fruit, it has the texture of a fresh young coconut with the sweetness of a honeydew melon-divine. The beautiful Cacao pod is opened, the fruit shared and the seeds saved for drying. I bought these from Leopoldo Rivadeneyra's Mama, she dries them and sells them in town. To preserve their Raw sacred offerings-they are soaked and ready for peeling. Roasting just a few to smell their aroma. Pachamama how do you know to be so beautiful~ Thank you.

The Feathered Serpent Quetzalcoatl, of the Aztecs, was one of the first deities of peace. Within Quetzalcoatl’s mythology is the myth that he flew the sacred cacao tree from paradise to give to the humans. Not only was Quetzalcoatl a peaceful god, he was also the god of wisdom and power. The Aztecs believed that chocolate was a food imbued with the knowledge of Quetzalcoatl.

XOCOLATL ala Xely :) 



Ingredients:
8.oz of raw cacao beans 
I TBSP of coconut oil
6 TBSP of raw almond butter or peanut butter
6 TBSP of Maple syrup- or your choice of sweetner
1/8 tsp of salt( sea salt) not over filled
1/4 tsp of cinnamon 
a pinch of cayenne 
a pinch of L-O-V-E a big one ♥
****Option: add TBSP of Maca to the recipe and roll in Raw hemp seeds

This is a very potent recipe, it will alter your state of mind and energy to higher frequencies. For a more milder effect mix in a cup of Raw Almond meal.

Chocolate Facts & Phenylethylamine (PEA)
PEA is a chemical in cacao that increases the activity of neurotransmitters (brain chemicals) in parts of the brain that control our ability to pay attention and stay alert. Elevated PEA levels occur when we are captivated by a good book, movie, or project; this happens specifically during those moments when we are so focused that we lose all track of time, food, and the outside world. PEA is noticeably abundant in the brains of happy people.

Anandamide (The Bliss Chemical)
A neurotransmitter called anandamide (n-arachidonoylethanolamin
e), has been isolated in cacao in quantities significant enough to affect the brain. Anandamide is a cannabinoid naturally found in the human brain. Anandamide is a lipid (fat) known as "the bliss chemical" because it is released while we are feeling great.

These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters such as anandamide, dopamine, etc. to circulate in the brain. According to Dr. Gabriel Cousens, MAO inhibitors facilitate youthening and rejuvenation.

MAO inhibitors may make one younger as they allow more neurotransmitters to remain in the bloodstream. A primary phenomenon that separates children from adults is the level of neurotransmitters in the blood and bodies of children. Generally, as one remains on the planet longer and longer, the level of neurotransmitters decreases. This creates physical rigidity, less creativity, less joy, and more aging! Nature's Prozac
Cacao is also a great source of serotonin, dopamine, and phenylethylamine, three well-studied neurotransmitters, which help alleviate depression and are associated with feelings of well being. Cacao contains monoamine oxidase inhibitors (MAO Inhibitors) that improve our mood because they allow serotonin and dopamine to remain in the bloodstream longer without being broken down. Cacao contains anandamide which delivers blissful feelings. Cacao also contains B vitamins, which are associated with brain health. All this makes cacao a natural Prozac!



You may find these in any multi-cultural mercado/market. Echo Park Guadalupe Market has them for under 3 frog skins
or buy organic at any health food store, more likely they will already be peeled and in nibs-in which case skip step 1-3.






Step 1: make sure to move them around the whole minute to not burn them. Turn comal off and let them cool down-keep moving them around. Option 2 (RAW): soak them for ten minutes, drain and peel. I peeled 12 oz in 3 hours-I enjoy this process. You may also buy them pealed at a health food store.





Step 2: peal the beans by massaging the skin-be gentle so it doesn't fall apart-if it does no worries just sift through after and pick out the precious nibs.
If you come across some stubborn ones place them in some water and continue then come back to them after and peal.





Step 3: crush beans into either a fine powder or as I like 1/2 n 1/2. Powder and nibs to chew on (helps keep teeth shiny). You may use a coffee grinder if you don't have a molcajete-my mama gave it to me and my comal.
Hint: Food processor works too.









Step 4: MIX wet ingredients in one bowl and dry ingredients in separate bowl then mix together with a wooden spoon.


optional: you may add mo-agave or extracts to flavor your xocolatl, or anything else to enhance the experience ;)


***also you may want to save some for hot coco, or your mole at this stage.

This is the consistency that lends itself to be balled up. Ball-m up




Step 6: Optional
roll your little xocolatl ball in crushed raw cashew nuts, Raw Brazilian Nuts, Raw Hemp seeds,  dried coconut, chia seeds, goji berries <3 so good!!!




Step 7: If you haven't eaten them all yet put them in the fridge for as long as you can stand to solidify and give them a bite into texture.
